Creamy Asparagus Soup
Creamy Asparagus Soup is an moderately easy soup you can prepare in just 48 minutes. Made with c. chopped onion, c. chopped celery, . margarine, c. cooked white rice and (10 oz.) pkg. frozen cut asparagus, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.
In a heavy 3 or 4-quart saucepan, cook onion and celery in margarine about 5 minutes, stirring several times until softened. Add rice, asparagus and broth.
Cover and simmer 8 to 10 minutes. PurΓ©e in batches in food processor or blender.
Return to saucepan. Add milk and heat to boiling point.
Season with nutmeg and pepper. Makes 6 cups.
