Crunchy Cinnamon Coffee Cake is an moderately easy dinner. Made with 3 c. post grape-nuts flakes, lightly crushed, 1 1/2 c. firmly packed brown sugar, divided, 1 1/2 tsp. ground cinnamon, divided, 4 c. all-purpose baking mix and 1 1/4 c. plus 2 tbsp. fat-free milk, divided, this recipe delivers authentic, satisfying flavors. Combine cereal, 1 cup of brown sugar and 1 teaspoon of cinnamon; set aside.
Mix together baking mix, remaining 1/2 cup brown sugar, 1 1/4 cups of milk, eggs and oil until just blended.
Pour half of batter into 9 x 13 pan sprayed with cooking spray; sprinkle with half of cereal mixture.
Bake at 350Β° for 35 minutes or until toothpick in center comes out clean.
Cool 10 minutes.
Whisk together powdered sugar, remaining 1/2 teaspoon cinnamon and remaining 2 tablespoons milk until well blended.
Drizzle over coffee cake.
Let stand until set.
