Curried Kidney Beans
Curried Kidney Beans is an moderately easy family-friendly dish. Made with 1/4 lb. butter or margarine, 2 medium onions, chopped, 2 green peppers, chopped, 2 tart apples, chopped and 2 tsp. curry powder or to taste, this recipe delivers authentic, satisfying flavors. Preheat oven to 350Β°.
Melt butter and saute onions, peppers, apples and curry powder until tender.
Place tomatoes in a colander and squeeze until all liquid is removed (reserve liquid for other uses).
Combine drained tomatoes with onion mixture, kidney beans, brown sugar, vinegar, salt and pepper in a casserole.
Bake for 30 minutes.
Sprinkle with Parmesan cheese before serving.
Especially good with baked ham.
