Eggplant Parmesan
Eggplant Parmesan is an impressive dinner you can prepare in about 1 hour 50 minutes. Made with c. chopped onion, garlic, (6 oz.) can tomato paste, . oregano and medium egg plants, peeled and sliced, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.
Saute onion and garlic in small amount of oil until golden brown.
Stir in tomatoes and paste; simmer 30 minutes, stirring often.
Stir in oregano and simmer 30 minutes more.
Mix eggs and salt.
Dip eggplant in eggs; then in bread crumbs.
Fry in oil; drain on paper towels.
Mix cheeses together.
Pour 1 cup mixture in 13 x 9-inch baking dish.
Top with 1/3 eggplant and 1/3 cheeses.
Repeat until used up.
Bake in a 350Β° oven for 45 minutes.
