Garden Stir-Fry
Garden Stir-Fry is an moderately easy dinner. Made with 2 boneless and skinned chicken breasts, 2 tbsp. olive oil, divided, 1 clove garlic, minced, 1 medium onion, chopped and 1 medium zucchini, sliced, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.
Cut chicken breasts diagonally into thin strips.
Heat one tablespoon oil in large skillet or wok.
Stir-fry chicken strips and garlic until chicken loses its pink color.
Remove from pan and set aside.
Heat the remaining tablespoon of oil.
Stir-fry the onion, zucchini and green pepper for 3 minutes.
Add mushrooms and tomatoes.
Continue to stir-fry an additional 3 minutes.
Return chicken to skillet.
Add spaghetti.
Stir-fry until heated through. Serves 3 to 4.
