German Potato Salad
German Potato Salad is an moderately easy German salad you can prepare in about 2 hours 12 minutes. Made with medium sized potatoes, bacon (strips), c. chopped onion, . flour and . sugar, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.
Boil potatoes with the skins on.
Peel and slice thinly.
Fry slowly in large skillet the bacon.
Drain on paper towel.
Saute in the bacon fat until golden the onion.
Blend in flour, sugar, salt, celery seed and dash of pepper.
Cook over low heat, stirring until smooth and bubbly.
Remove from heat.
Stir in water and vinegar. Bring to a boil, stirring constantly.
Boil 1 minute.
Stir in carefully the potatoes and crumbled bits of bacon.
Remove from heat.
Cover and let stand until ready to serve.
Makes 6 to 8 servings.
