German Sweet Chocolate Cake
German Sweet Chocolate Cake is a deep three-layer buttermilk chocolate cake made with Baker's German sweet chocolate, beaten egg whites, and a tender sifted-flour batter. Frosting the tops only gives it an old-fashioned look and lets the dark crumb show.
Melt the German sweet chocolate in the boiling water and let it cool.
Cream the margarine or butter with the sugar until fluffy.
Add the egg yolks one at a time, beating well after each addition.
Mix in the melted chocolate and vanilla.
Sift together the flour, salt, and baking soda, then add alternately with the buttermilk.
Beat until smooth and fold in the stiffly beaten egg whites.
Pour into three deep 8- or 9-inch pans lined with wax paper and bake at 350 F for 30 to 40 minutes.
Cool the layers and frost the tops with coconut-pecan frosting.
