Ham-Zucchini Stir-Fry
Ham-Zucchini Stir-Fry is an impressive dinner. Made with 4 tbsp. vegetable oil, 3/4 lb. baked ham, sliced 1/4-inch thick, then cut into thin strips, 3 medium zucchini, cut into 1/4-inch thick slices, 4 carrots, cut into 1/4-inch thick slices and 1 medium red bell pepper, chopped, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.
In a wok or 10-inch skillet, heat 2 tablespoons oil over medium-high heat until hot.
Add ham and stir-fry until lightly browned, 1 to 2 minutes.
Remove to a plate.
Add remaining 2 tablespoons oil to pan and, when hot, add zucchini, carrots, red pepper and onion.
Stir-fry until onion is softened, about 3 minutes.
Add water; cover and cook 2 to 3 minutes until carrots and red pepper are crisp-tender.
