Jambalaya
Jambalaya is an moderately easy dinner. Made with 1 lb. italian sausage (hot, sweet or turkey), 1 (14 oz.) can crushed tomatoes, 1 small bell pepper, chopped, 1 medium onion, chopped and 2 c. chicken broth or bouillon, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Brown and crumble sausage (use 1 tablespoon oil if browning turkey sausage).
Add one chopped medium onion and one chopped bell pepper and saute until softened.
Add all remaining ingredients.
Cover and simmer on top of stove for 20 to 30 minutes until rice is cooked through.
Serves 6 to 8.
May be frozen and takes well to reheating in the microwave.
