Jambalaya
Jambalaya is an impressive dinner. Made with 1/2 lb. bacon, 1/2 c. finely chopped onion, 2 green peppers, chopped, 1 c. uncooked rice and 1 clove garlic, minced, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Cut bacon into 1/2-inch pieces and cook in heavy, oven-proof pan with cover.
When browned, remove and drain on paper towels. Saute onion and green pepper and cook for one minute.
Add rice and cook for 3 minutes.
Add all remaining ingredients and bring to a boil.
Cover pot and place in oven.
Bake covered at 350Β° for 15 to 20 minutes or until liquid is absorbed and rice is tender.
