Jambalaya
Jambalaya is an impressive dinner. Made with 1/2 lb. hot italian sausage, cut in 1-inch pieces, 1 large onion, coarsely chopped, 1 large green pepper, coarsely chopped, 6 cloves garlic, crushed and 2/3 c. uncooked long grain rice, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.

Brown sausage in a large skillet. Remove sausage from skillet and drain. Add onion, green pepper and garlic.
Saute until lightly browned. Add rice.
Cook 2 minutes, stirring constantly. Stir in sausage, ham, tomatoes, chicken broth and seasonings. Bring to a boil.
Pour into 4-quart casserole. Bake, covered, in a 375Β° oven for 40 to 45 minutes, stirring occasionally. Place shrimp on top and bake, covered, for 10 minutes more. Serves 8.
