Jambalaya
Jambalaya is an impressive dinner. Made with 1 1/2 lb. chicken strips, 1/2 tsp. salt, 1/2 tsp. ground black pepper, 1 tbsp. vegetable oil and 3/4 lb. sausage, cut into 1/4-inch slices, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Season chicken with salt and pepper.
Brown in hot oil in large saucepan over high heat; add sausage, cook 2 to 3 minutes. Remove chicken and sausage from saucepan; set aside.
Cook onions, green pepper, celery and garlic in same saucepan over medium heat until tender-crisp.
Stir in rice, red pepper, broth and reserved chicken and sausage; bring to a boil.
Simmer covered 30 minutes. Stir in green onions and tomatoes.
Makes 8 servings.
