Larry Rameriz'S Quesadillas("Like No Others") is an easy dinner. Made with 2 c. flour, 2 tbsp. baking powder, 1 tsp. salt, 2 tbsp. shortening and cheddar or jack cheese, shredded, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Combine all ingredients (except cheese) in a bowl.
Add lukewarm water to make a soft dough.
Roll out to about 1/4-inch thickness.
Cut in 2 x 2-inch squares.
Deep fry in hot fat until golden brown.
Dough will puff up.
Cut open at one end and fill with Cheddar or Jack cheese or a mix of both.
Heat in oven about 5 minutes or until cheese melts.
Serve hot with red or green salsa.
