Lucy's French Cheesecake
Lucy'S French Cheesecake is an moderately easy dinner. Made with 2 (8 oz.) pkg. cream cheese, 1 c. minus 2 tbsp. sugar, 1 tsp. vanilla, 1 pt. sour cream and grated rind and juice of 1 lemon, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.

Beat cream cheese and sugar with an electric mixer until sugar no longer looks granular.
Mix in egg yolks, vanilla, sour cream, lemon juice and grated lemon rind.
Beat egg whites until stiff and fold gently, but well, into cheese mixture.
Pour into lightly baked pastry-lined spring-form pan.
