Mini Pancakes
Mini Pancakes is an moderately easy dinner. Made with 1 1/4 c. all-purpose flour, 1 tbsp. sugar, 1 tsp. baking powder, 1/2 tsp. baking soda and 1/4 tsp. salt, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.
In a medium mixing bowl, stir together the flour, sugar, baking powder, baking soda, and salt.
In another mixing bowl, combine the buttermilk, egg and oil.
Add to the flour mixture all at once. Stir the mixture just until combined, but still slightly lumpy. Spray an unheated nonstick griddle or nonstick heavy skillet with nonstick coating.
For each pancake, pour about 1 tablespoon batter onto hot griddle or skillet.
Cook until pancakes are golden brown on both sides, turning when pancakes have bubbly surfaces and slightly dry edges, about 1 minute per side.
