New England Clam Chowder
New England Clam Chowder is an moderately easy soup you can prepare in about 1 hour 32 minutes. Made with (8 oz.) cans minced clams, bacon, cut in 1/2-inch pieces, c. chopped onion, c. chopped celery and c. diced, cooked potatoes, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.
Drain clams; reserve 1 cup liquid.
Fry bacon in skillet until almost crisp.
Add onion and celery.
Saute until tender; drain. Combine bacon mixture, potatoes, clam liquid, salt, pepper and thyme in large saucepan.
Simmer 10 minutes.
Add milk and clams. Heat thoroughly.
Do not boil.
Top each serving with 1 teaspoon butter.
Makes 6 servings.
