Nine-Day Cole Slaw
Nine-Day Cole Slaw is an moderately easy dinner. Made with 3 lb. head cabbage, thinly shredded, 1 medium green pepper, finely chopped, 2 medium onions, finely chopped, 1 c. plus 2 tbsp. sugar and 1 c. cider vinegar, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.
Stir together cabbage, onion, green pepper and 1 cup sugar. Bring to a boil the salad oil, vinegar, celery seed, salt and remaining sugar.
Immediately pour this hot mixture over the cabbage mixture.
Chill overnight before serving.
Keep stored in the refrigerator.
Makes about 2 1/2 quarts.
