Oatmeal Blueberry Muffins
Oatmeal Blueberry Muffins is an moderately easy dinner. Made with 1 1/4 c. self-rising flour, 1 c. minute oats, 1/2 c. sugar, 1 egg, slightly beaten and 1/2 c. water, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.
In large bowl, stir together flour, oats and sugar.
Set aside.
In small bowl, mix egg, water and oil.
Add all at once to oat mixture, stirring just until moistened.
Stir in blueberries. Spoon in greased muffin cups 2/3 full.
Blend sugar and cinnamon. Sprinkle over batter.
Bake at 400Β° for 18 to 20 minutes.
Yield: 1 dozen.
