Oatmeal-Bran Muffins
Oatmeal-Bran Muffins is an moderately easy dinner. Made with 2 c. boiling water, 2 c. 100% bran cereal, 1/4 c. oil, 3/4 c. applesauce and 1/2 c. sugar, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.
Pour water over bran and set aside.
Mix oil, applesauce, sugar, eggs and buttermilk in medium sized mixing bowl.
In large bowl, mix flour, salt, soda and oats.
Add to flour mixture both other mixtures and stir until combined.
Fill muffin tins 2/3 full and bake at 375Β° for 20 minutes.
Batter may be refrigerated up to 6 weeks.
