Oatmeal-Raisin Muffins
Oatmeal-Raisin Muffins is an moderately easy dinner. Made with 1 c. sifted all-purpose flour, 3 tsp. baking powder, 1/4 c. shortening, 1 c. quick cooking rolled oats and 1 egg (or 2 egg whites), this recipe delivers authentic, satisfying flavors. Bursting with flavor in every bite.

Sift together flour, baking powder and salt.
Cut in shortening until mixture is like coarse crumbs.
Stir in rolled oats.
Combine egg, milk and brown sugar; beat well.
Stir into dry ingredients; add raisins.
Spoon into paper baking cups in muffin pans.
Combine granulated sugar and cinnamon; sprinkle over batter.
Bake in a 425Β° oven for 15 to 20 minutes.
