Pineapple-Carrot Cake
Pineapple-Carrot Cake is an impressive dinner. Made with 4 eggs, 2 c. sugar, 2 c. freshly grated carrots, 1 tsp. vanilla and raisins, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.

Sift together dry ingredients.
Set aside.
Cream the eggs and sugar.
Add dry ingredients alternately with oil.
Mix until blended.
Add pineapple, nuts, raisins, grated carrots and vanilla.
Turn into tube pan.
Bake 40 to 60 minutes at 350Β° until cake tester comes out dry.
Place on rack for 5 minutes. Remove from pan and let cool.
If desired, frost with cream cheese frosting, but is delicious plain.
