Pork Jambalaya
Pork Jambalaya is an moderately easy dinner. Made with 2 lean pork chops, salt and pepper, 1/3 c. chopped celery, 1/3 c. chopped scallions with tops and 1/3 c. chopped green pepper, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Season chops with salt and pepper.
In a small lightly greased ovenproof skillet, brown chops on both sides.
Remove chops; set aside.
Pour off all but 2 teaspoons drippings.
Add celery, scallions and green pepper.
Saute until tender.
Stir in rice, broth and seasonings.
Bring to a boil.
Return chops to pan. Cover; bake in 375Β° oven for about 30 minutes or until chops are tender.
Fluff rice with fork.
Makes 2 servings.
