Potato and Leek Soup
Potato And Leek Soup is an moderately easy dinner. Made with 5 to 6 leeks, chopped, 5 to 6 potatoes, peeled and sliced thin, 1 garlic clove, minced, 2 tbsp. heaping wondra flour, mixed into a bit of water and 1 tsp. Saute leeks and garlic in some vegetable oil until soft in an 8-quart pot.
Add the Wondra flour mixture and stir until well blended.
Add the remaining ingredients and fill pot with water until approximately 3/4 full.
Bring to a boil.
Reduce heat and simmer until thickened to desired consistency.
