Pumpkin Muffins
Pumpkin Muffins is an moderately easy dinner. Made with 1 egg, 1/2 c. milk, 1/2 c. mashed cooked or canned pumpkin, 1/4 c. melted shortening and 1 1/2 c. sifted flour, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.

Preheat oven to 400Β°.
Grease bottom of muffin cups. Beat egg slightly with fork.
Stir in milk, pumpkin and shortening.
Sift dry ingredients together and stir in just until flour is moistened.
Batter should be lumpy.
Fold in raisins.
Fill greased muffin cups 2/3 full.
Sprinkle 1/4 teaspoon sugar over each muffin.
Bake 18 to 20 minutes.
Serve hot.
