Rabbit Jambalaya
Rabbit Jambalaya is an moderately easy dinner. Made with 1 large rabbit, cut up and seasoned with tony's seasoning, 1/2 c. chopped bell pepper, 1/2 c. chopped parsley, 2 c. raw rice and 1 large onion, chopped, this recipe delivers authentic, satisfying flavors. Brown rabbit in small amount of oil.
Set browned rabbit aside.
Saute onion, celery, bell pepper and green onions until wilted.
Add water, rice, parsley and rabbit; mix well.
Cover and cook on low heat until rice is done, about 30 minutes.
