Refrigerator Bran Muffins
Refrigerator Bran Muffins is an moderately easy dinner. Made with 2 1/2 c. buttermilk, 1/3 c. oil, 2 eggs, 3 c. bran flakes cereal with or without raisins and 2 1/2 c. all-purpose flour, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.
Heat oven to 400°.
Line desired number of muffin cups with paper baking cups.
In large bowl, combine buttermilk, oil and eggs; beat well.
Lightly spoon flour into measuring cup; level off.
Add remaining ingredients, stirring just until moistened. Spoon batter into paper-lined muffin cups, filling 2/3 full. (Store remaining batter in tightly covered container in refrigerator for up to 4 weeks.)
Bake at 400° for 20 to 25 minutes.
