Roast Chicken Rignato A La Contessa is an moderately easy dinner. Squeeze lemon juice on chicken.
Sprinkle with salt and pepper.
Set aside at room temperature for 30 minutes.
Place chicken in a small roasting pan with olive oil and butter. Sprinkle with oregano.
Roast in a preheated 325Β° oven, basting frequently for about 1 hour.
Add potatoes and bake 1 hour longer. (Chicken should be well cooked.) Turn occasionally to brown on all sides.
