👨‍🍳 Instructions

Preheat oven to 400°.

Place lamb on rack in shallow roasting pan.

Rub with lemon juice.

Mash garlic and rosemary together. Make little slits outside of lamb and stuff with garlic and rosemary mixture.

Sprinkle lamb with paprika.

Roast at 400° for 15 minutes.

Reduce heat to 325°; insert meat thermometer and continue cooking until thermometer registers 10° below desired doneness (about 1 hour and 50 minutes). Remove from oven; let stand 15 minutes.

Serve with mint jelly, mint sauce or Port wine sauce.
