Saucy Enchiladas
Saucy Enchiladas is an moderately easy dinner. Made with 1 lb. ground beef, 1 medium onion, chopped, 1 1/2 dozen corn tortillas, vegetable oil and 1 can cream of chicken soup, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.

Combine ground beef and onion in skillet; brown and drain.
Fry tortillas, one at a time, in 1/4-inch hot oil.
Cook 5 seconds on each side.
Drain on paper towels.
Spoon meat mixture evenly on center of each tortilla and roll them up.
Place tortillas, seam side down, in a jelly roll pan.
Combine remaining ingredients, except Cheddar cheese, in a small saucepan; cook over medium heat until the slices of American cheese melt.
Pour evenly over the enchiladas and sprinkle with Cheddar cheese.
Bake at 350Β° for 20 minutes or until bubbly.
