Sherry Sponge Cake
Sherry Sponge Cake is an moderately easy dinner. Made with 3/4 c. ground almonds, 1 1/4 c. flour, 1/4 tsp. salt, 1/2 tsp. cinnamon and 8 eggs, separated, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.

Sift dry ingredients together.
Add almonds; mix 8 yolks and then add sugar, sherry or another 1/2 cup orange juice along with 1/3 cup orange juice.
Add dry mixture; mix together.
Fold in beaten egg whites.
Put in ungreased baking pan (spring-form). Bake in a 325Β° oven for 1 hour.
Cool for 45 minutes.
Garnish with powdered sugar, orange zest and orange slices.
