Squash Stir-Fry
Squash Stir-Fry is an moderately easy dinner. Made with 2 tbsp. vegetable oil or peanut oil, 1 clove garlic, minced, 1 large onion, sliced and separated into rings, 3 medium zucchini, thinly sliced and 3 medium size yellow squash, thinly sliced, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.

Pour oil into iron frying pan or hot wok, coating sides until bottom is covered with oil.
Add garlic and onion; stir-fry 1 minute.
Stir in zucchini and yellow squash.
Cook 2 to 3 minutes or until crisp-tender.
Add tomatoes (optional), salt and pepper. Stir well.
Sprinkle cheese over vegetables, stirring just until cheese melts.
Yields about 6 servings.
