Stir-Fry Cashew Chicken
Stir-Fry Cashew Chicken is an moderately easy dinner. Made with 3 skinned boneless chicken breast halves, 1/3 c. oil, 1 lb. fresh green beans, cut in 1-inch pieces, 1 yam, sliced 1/4-inch thick pieces and 1 can sliced water chestnuts, drained, this recipe delivers authentic, satisfying flavors. Cut chicken into strips.
Heat oil in skillet 2 to 3 minutes. Brown chicken and drain on paper towels.
Add 2 to 3 tablespoons oil to skillet.
Add green beans and yams.
Cook for 2 minutes. Then add chicken, water chestnuts and stir-fry mix.
Cook until thick (about 10 minutes).
Stir in water and cashews.
Cook another 2 minutes.
Serve over rice.
