Cut carrots (approximately 6) into 2 x 1/4-inch strips. Slice celery and set aside.
Heat oil in wok or skillet until hot. Add carrots and celery and stir-fry over medium heat for about 10 minutes or until almost tender.
Add onion and zucchini and continue stirring until crisp and tender.
Add seasonings and serve.
