Summer Stir-Fry
Summer Stir-Fry is an moderately easy dinner. Made with 2 yellow squash, 2 zucchini, 2 tomatoes, 1 onion and 2 tbsp. olive oil, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Slice zucchini and squash into 1/8-inch rounds.
Chop tomatoes.
Slice onion and separate into rings.
Heat the olive oil in a hot wok.
Add onion, zucchini and squash.
Cook until tender.
Add tomatoes and oregano.
Add salt and pepper to taste.
Stir until tomatoes are warm.
Pour into microwave-safe dish.
Sprinkle with Parmesan cheese and microwave on low until cheese begins to melt.
