Swedish Pancakes
Swedish Pancakes is an moderately easy dinner. Made with 2 c. milk, 4 tbsp. butter, 4 eggs, 1 c. flour and 2 tsp. baking powder, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Melt the butter in a small saucepan.
Add the milk and warm it, but do not let it boil.
While the milk heats, beat the eggs, then beat the flour, baking powder and salt into the eggs.
Beat the milk and butter into the egg and flour mixture, mixing well. This will be a very thin batter.
Fry 5-inch pancakes on a lightly greased, very hot skillet.
Serve with maple syrup or topped with strawberries and whipped cream for a real treat.
