Sweet & Spicy Roasted Pork And Apples is an impressive dinner. Made with 4 tablespoons light brown sugar, 1 tablespoon ground chili powder, 2 teaspoons salt, 4 lb. bone in pork loin roast and 3 apples, cored and sliced 1/2 inch thick, this recipe delivers authentic, satisfying flavors. Position rack in center of oven, preheat to 425 degrees. Combine 2 tablespoons sugar, chili powder, salt.
Rub this mixture over pork loin.
Place on rack in shallow roasting pan.
Roast 20 minutes.
Reduce temperature to 375 degrees, bake 1 hour and 15 minutes or until done.
Let stand 10 minutes before carving. Meanwhile, coat jellyroll pan with cooking spray, in pan toss apples, onion with tablespoon vinegar, oil, cinnamon and remaining sugar.
Place in oven 30 minutes before pork is done.
Cook until golden, stirring every 10 minutes.
In pot over high heat, combine juice, broth, thyme, and remaining vinegar.
Cover, bring to boil and uncover, bring to boil 30 more minutes.
Transfer pork and apples to platter.
Add pan drippings to juice mixture, whisk in butter, pour over meat.
