Thyme Roasted Vegetables
Thyme Roasted Vegetables is an moderately easy dinner. Heat oven to 400 degrees.
In a large bowl, stir together thyme, salt, garlic, and oil.
Add vegetables, and mix gently to coat.
Place vegetables in a 9x13 inch baking pan.
Cover with foil, and bake, stirring occasionally, for 25 minutes. Uncover; continue baking for 15 to 20 minutes, stirring once until vegetables are tender and just start to brown.
