Vegetarian Chili
Vegetarian Chili is an impressive dinner. Made with 2 tbsp. olive or vegetable oil, 1 c. chopped onion, 1/2 c. chopped green bell pepper, 1/2 c. chopped celery and 2 minced cloves garlic, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Heat oil in large saucepan over medium-high heat.
Stir in onion, green pepper, celery and garlic; cook until vegetables are tender crisp, stirring occasionally.
Add remaining ingredients, except avocado and cheese.
Bring to boil; reduce heat to low.
Cover and simmer 20 to 30 minutes, stirring occasionally.
Garnish with avocado slices and cheese.
Yields 7 to 8 cups.
