Yellow Squash Muffins
Yellow Squash Muffins is an easy dinner. Made with 2 lb. (2 c.) yellow squash, cooked and mashed, 2 eggs, 1 c. melted butter, 1 c. sugar and 3 c. flour, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.

Combine squash, eggs and butter; stir well.
Set aside. Combine remaining ingredients in large bowl.
Make well in center of mixture.
Add squash mixture to dry ingredients, stirring just enough until moistened.
Spoon into greased muffin cups, filling 3/4 full.
Bake at 375Β° for 20 minutes.
Makes 2 dozen regular muffins.
