Zucchini Muffins
Zucchini Muffins is an impressive dinner. Made with 2 c. shredded zucchini, 1 c. oil, 1/3 c. molasses (or karo), 2 1/2 c. flour and 1 tsp. baking soda, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Beat eggs to blend.
Add oil, sugar, molasses and vanilla. Continue beating until thick and foamy.
Combine dry ingredients; add to egg mixture.
Beat until just blended.
Add zucchini, raisins and nuts.
