Zucchini Oatmeal Muffins
Zucchini Oatmeal Muffins is an moderately easy dinner. Made with 2 1/2 c. flour, 1 1/2 c. sugar, 1 c. pecans, chopped, 1 medium zucchini (10 oz.), finely shredded and 3/4 c. oil, this recipe delivers authentic, satisfying flavors. Bursting with flavor in every bite.

In large bowl measure first 7 ingredients.
In medium bowl with fork, beat eggs slightly; stir in zucchini and oil.
Stir the rest of ingredients all at once.
Batter will be lumpy.
Spoon into greased muffin tins.
Bake at 400Β° for 25 minutes.
Check with toothpick.
Makes about 12.
