Zucchini Pancakes
Zucchini Pancakes is an moderately easy dinner. Made with 3 c. grated zucchini, 2 eggs, 1/2 c. chopped parsley, 1 c. baking mix (pancake or bisquick) and 1/2 c. grated parmesan cheese, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.

In a large mixing bowl, combine zucchini, eggs and parsley. In a small bowl, combine baking mix, Parmesan cheese and garlic salt and add to zucchini mixture.
Stir just enough to dampen dry ingredients.
Heat olive oil and butter in a large skillet.
Drop batter from a spoon into the heated oil and brown pancakes lightly on both sides.
Keep warm in a 300Β° oven until all are cooked.
