Bean And Canadian Bacon Soup is an moderately easy dinner. Heat oil; add carrot and onion and saute about 5 minutes.
Add bacon; saute 5 minutes longer.
Add beans, broth, oregano and bay leaves.
Bring to boil; reduce and simmer, covered, until beans are tender, about 1 1/2 hours.
Season to taste with salt and pepper.
Remove bay leaves before serving.
Preferable to refrigerate soup a day before serving.
