Sift flour 4 times.
Beat egg yolks until thick and creamy, lemon colored.
Add water; continue beating until very thick. Gradually beat in sugar, then extract.
Fold in flour, a little at a time.
Beat egg whites until foamy.
Add cream of tartar and beat until they form moist, glossy peaks.
Fold in egg yolk mixture.
Bake in angel food pan in slow oven at 325Β° for 1 hour. Invert 15 minutes.
Use whatever size pan is needed for: obstorte, cake, cheesecake, etc.
Fill with apricot jam.
Top with cream filling.
Decorate with cake decorator.
