Bran Muffins
Bran Muffins is an moderately easy dinner. Made with 1 1/2 c. flour (all-purpose), 3 tsp. baking powder, 1 tsp. salt, 1/2 c. sugar and 2 c. 40% bran flakes, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Sift together flour, baking powder, salt and sugar.
Set aside. Measure bran flakes and milk into mixing bowl; stir to combine. Let stand 1 to 2 minutes or until most of moisture is absorbed. Add egg and shortening; beat well.
Add sifted dry ingredients to bran flakes mixture, stirring only until combined.
Fill greased 2 1/2-inch muffin pan cups 3/4 full.
Bake in moderately hot oven at 400Β° about 25 minutes, or until golden brown.
Serve hot.
Yields 12 muffins.
