Burukutu
Burukutu is a Nigerian fermented sorghum drink with a cloudy tan color, malty-sour flavor, and light effervescence, served chilled in calabash cups as a rustic refreshment with grain aroma and gentle fermented tang.

Soak sorghum and millet, then drain and allow part of the grain to malt.
Cook the grain mash with water until starchy and aromatic.
Cool, stir in malted grain, ginger, and cloves, and let ferment until tangy.

Chill and serve in small cups.
