Cappuccino Thins(Food Processor Recipe) is an moderately easy dinner. In food processor, use regular work blade to chop chocolate using on/off turns until chocolate resembles coarse meal. Transfer to bowl and set aside.
In food processor, combine sugars, egg yolk, coffee, cocoa, cinnamon and salt; mix about 1 minute.
Add butter and mix.
Add flours and chocolate; mix using on/off turns just until flour is incorporated into dough.
Do not over process.
Divide into 4 equal portions.
Form dough into "logs" and wrap each in wax paper.
Refrigerate until firm (about 1 hour) or freeze.
Cut into 1/4 inch slices and put 1 1/2 inches apart on sheet; bake about 8 minutes in 325Β° oven until set. Transfer to wire rack to cool.
