Carrot Raisin Bran Muffins
Carrot Raisin Bran Muffins is an moderately easy dinner. Made with 2 c. raisin bran, 2/3 c. buttermilk, 1/2 c. dark karo syrup, 1 c. flour and 2 tsp. baking soda, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.
Mix cereal, buttermilk and syrup. Let stand 10 minutes. In another bowl combine flour, soda and cinnamon. Add egg, sugar & oil to cereal mixture.
Add cereal mixture to flour mixture and stir until well blended. Stir in carrots. Pour into greased muffin cups. Bake for 20 minutes at 350Β°. Makes approximately 12 muffins.
