Chewy Christmas Cookies
Chewy Christmas Cookies is an moderately easy dinner. Made with 1 c. brown sugar, 1 c. white sugar, 1 c. shortening, 1 tsp. vanilla and 1 c. flour, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.

Cream together sugars and shortening until they go "plop" when dropped from a spoon.
Add eggs, beaten with vanilla.
Sift together flour, salt and baking soda; add to the creamed mixture, blending well.
(Don't skip sifting.
Some of the nonsifts have a drying effect on cookie doughs where the only moisture is from eggs.)
Grind the dates and raisins and add to mixture, beating well.
(Grinding is important, cutting up the dates and raisins won't do.)
Add pecans and coconut.
It is normal for cookies to fall some after they are out of the oven.
Bake at 325° to 350° for 8 to 10 minutes, depending on your oven.
