Chili Con Carne
Chili Con Carne is an moderately easy dinner. Made with 2 lb. ground beef, 1 large onion, diced, 1 garlic clove, minced, 1/4 c. chili powder and 1 tsp. salt, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.
In 5-quart Dutch oven, over high heat, cook beef, onion and garlic, stirring often, until all pan juices evaporate.
Stir in chili powder, salt and pepper.
Cook 1 minute.
Stir in tomatoes with liquid, kidney beans and tomato sauce.
Over high heat, heat to boiling.
Reduce heat to low, cover and simmer 30 minutes, stirring often.
Skim fat from chili, if any.
Serves 8 and freezes well.
